Food Heat Thermometers for Safer, More Controlled Cooking

Use a probe thermometer for internal food temperature, an infrared tool for surfaces and an oven thermometer for cooking-chamber heat. One instrument rarely replaces all three.

A food heat thermometer is useful only when its sensor matches the temperature you need. A penetration probe measures the centre of meat or a liquid. An infrared cooking thermometer reads a surface without contact, while a dedicated oven thermometer measures the air around the food.

Common questions

Questions before you buy

What type of thermometer measures heat inside food?

Use a penetration probe or digital food thermometer. Place its sensing area in the centre of the thickest part.

Can an infrared thermometer check whether meat is cooked?

It can read the surface, not the centre. Confirm doneness with a clean probe thermometer.

Is a cooking thermometer the same as an oven thermometer?

No. A cooking probe measures food internally; an oven thermometer measures the surrounding oven air.

How should a food thermometer be cleaned?

Health Canada advises warm, soapy water before each use. Follow the maker's limits for immersing the probe, cable and display.
