How to Use a Meat Thermometer in the Oven Safely

Use only a leave-in probe labelled oven-safe. Put its sensing area in the thickest part of the food, route the cable as directed, and verify the final reading in another spot.

01

Confirm that the probe can stay in the oven

A leave-in cooking probe is designed to remain in food during cooking; an ordinary instant-read thermometer usually is not. Check the manual for limits on the probe, cable, connector and display before heating any part.

02

Insert the sensing area before cooking

Place the tip in the thickest edible section, away from bone, stuffing, fat pockets and the pan. For a thin cut, approach from the side so more of the sensing area sits in the centre.

03

Route the cable without pinching it

Follow the maker's directions for passing the cable through the oven door. Keep it away from heating elements, sharp bends and exposed flame, and leave the display outside unless it is expressly oven-rated.

04

Set the alarm for the food, not the oven

Select a target using Health Canada's current safe internal cooking temperatures. Remember that oven air temperature and the centre of the food are different measurements.

05

Verify the coldest spot before serving

When the alarm sounds, use an instant-read thermometer in one or two nearby places if available. Continue cooking if any valid centre reading remains below the applicable guidance.

06

Remove and clean the probe safely

Use protection for the hot metal and cable. Once safe to handle, wash the food-contact section with warm, soapy water and dry it as the manual directs.

Common questions

Questions before you buy

Can you leave a meat thermometer in the oven?

Yes, but only a model or probe identified as oven-safe. Instant-read thermometers are generally inserted for a reading and then removed.

Where should a meat thermometer go in a roast?

Put the sensing area in the thickest central portion, avoiding bone, heavy fat and the roasting pan. Check another spot before serving.

Can the thermometer cable touch the oven rack?

Follow the cable instructions and avoid unnecessary contact with hot metal or heating elements. Never exceed the cable's stated heat limit.

Should the thermometer display stay inside the oven?

Usually no. A cabled leave-in probe normally connects to a display that stays outside; consult the exact model manual.
