How to Use a Meat Thermometer in the Oven
Use an oven-safe leave-in probe before cooking, place its tip in the thickest edible section, and keep the cable away from heating elements. An instant-read thermometer goes in only when you open the oven to check.

01
Choose a thermometer designed to stay in the oven
Check the manual for explicit oven-safe use. A leave-in probe has a heat-rated metal probe and cable or an entirely wireless probe; the display or charging base normally stays outside. Do not leave a handheld instant-read thermometer inside unless its maker specifically permits it.
02
Where should the probe go in meat?
Insert the sensing area into the thickest section, away from bone, gristle, the pan, and large pockets of fat. For a thin cut, insert from the side so more of the sensing area reaches the center.
03
Route the cable without damaging it
Run a heat-rated cable through the door with no sharp kink, and keep it away from an exposed flame, broiler, or heating element. Close the door gently and place the display where steam and radiant heat cannot reach it.
04
Set the alert for the food you are cooking
Use the safe minimum temperature from an authoritative food-safety source, not color alone. Account for any rise during resting only when the recipe and food-safety guidance support that approach.
05
Confirm the final reading
Near the end, check another central spot with a clean instant-read thermometer. If the second location is cooler, continue cooking and use the lowest valid center reading to guide the decision.
06
Clean and store the probe
After cooking, remove the hot probe with an oven mitt. Clean only as its manual directs; avoid immersing connectors or displays unless the manufacturer gives them a suitable waterproof rating.
Common questions
Questions before you buy
Can you put a meat thermometer in the oven while cooking?
Yes, if it is expressly designed as an oven-safe leave-in thermometer. A conventional instant-read unit should be used for brief checks and removed.
How far should a meat thermometer go into meat?
Place the entire sensing area in the center of the thickest edible portion. The required depth varies by probe, so check its manual.
Can the thermometer cable be shut in the oven door?
Usually, a heat-rated probe cable can pass through the closed door without a sharp bend. Keep it away from heating elements and stay within its stated temperature limit.
Do you leave a meat thermometer in while the meat rests?
You may leave an oven-safe probe in place to watch carryover cooking, provided the probe remains within its limits. Remove it before carving.
Start with a dependable instant-read thermometer; add a leave-in or wireless probe when you want continuous monitoring.
