How to Choose a Cooking Thermometer for Frying

For oil, use a thermometer whose stated range covers frying temperatures and that can be held safely on the pot. Use a separate instant-read probe to check the food itself.

A cooking thermometer for frying needs to answer one of two different questions: how hot is the oil, or has the food reached a safe internal temperature? A clip-on candy or deep-fry thermometer monitors the cooking medium. An instant-read food thermometer checks the center of chicken, fish or another item after it is lifted clear of the oil.

Common questions

Questions before you buy

Can I use a meat thermometer to measure frying oil?

Only if the model's stated range and immersion instructions cover hot oil. A purpose-built deep-fry or candy thermometer is easier to secure for continuous monitoring.

Where should a frying thermometer sit in the pot?

Keep the sensing section in the oil but off the bottom and sides, which can be hotter than the oil around the food. Use the supplied clip as directed.

Can an instant-read thermometer stay in frying oil?

Usually not. Take a brief reading within its immersion limits, then remove it; consult the exact manual before use.

How do I check fried chicken with a thermometer?

Lift a piece away from the oil, insert a clean instant-read probe into the thickest section without touching bone, and check another spot if needed.
