Food Thermometer Types and When to Use Each One

Instant-read, leave-in, wireless, dial, infrared and appliance thermometers answer different questions. Start with what you need to measure and whether the probe remains during cooking.

Food thermometer types are not interchangeable. An instant-read probe checks internal food temperature at a moment in time; a leave-in cooking thermometer tracks it continuously. Wireless probes and remote monitors add distance, while dial oven thermometers and refrigerator thermometers measure the appliance environment instead of the food itself.

Common questions

Questions before you buy

What are the main types of food thermometer?

Common types include digital and dial instant-read probes, oven-safe leave-in probes, wireless systems, candy or deep-fry thermometers, infrared surface thermometers, and refrigerator or oven thermometers.

What type of thermometer is best for meat?

Use a food-contact probe that reaches the coolest internal area. Instant-read models suit spot checks; leave-in models suit continuous monitoring.

Can an infrared thermometer check meat doneness?

It measures surface temperature, not the center. Use a probe thermometer to confirm internal doneness.

What is the difference between oven-safe and instant-read thermometers?

An oven-safe design can remain in place during cooking within its limits. An instant-read model is inserted briefly and removed after the reading.
