Identify whether the thermometer is leave-in
Look for an explicit oven-safe or leave-in statement in the exact model's manual. A metal probe alone does not prove that its handle, electronics or cable can tolerate oven heat.

Guide
Only an oven-safe leave-in thermometer or probe should remain in the oven. Remove folding and handheld instant-read models after each spot check.
Look for an explicit oven-safe or leave-in statement in the exact model's manual. A metal probe alone does not prove that its handle, electronics or cable can tolerate oven heat.
With a wired unit, the probe and approved cable enter the oven while the display remains outside. Route the cable exactly as the maker allows and keep it away from heating elements, flame and sharp door edges.
Insert it into the thickest edible part without touching bone, the pan or a large fat pocket. For a whole bird, verify more than one USDA-recommended location before serving.
The probe tip, cable, transition joint and base can have different maximum temperatures. Broiling and direct flame may exceed limits even when ordinary roasting does not.
Open the oven safely, insert the probe, wait for a stable reading and remove it. Do not close the door on a folding or handheld thermometer.
A leave-in probe tracks one location. Confirm the coldest likely areas with a second reading, especially in poultry or irregular roasts.
Common questions
A digital system can go in only if its designated probe is oven-safe; the display usually remains outside. A handheld instant-read thermometer must be removed.
Only route the cable through the door if the manufacturer permits it. Avoid crushing, sharp bends and contact with heating elements.
A purpose-built wireless leave-in probe can, within its stated internal and ambient limits. Its charger or repeater normally stays outside.
An oven-safe dial thermometer may stay in when the manufacturer says it is designed for roasting. Position its sensing area correctly and verify other thick sections before serving.
