Thermal Meat Thermometers for Internal and Surface Checks

For doneness, use a contact probe inside the meat. An infrared thermal food thermometer reads only the surface and cannot confirm a safe center temperature.

“Thermal meat thermometer” can describe two very different tools. A penetration probe measures internal food temperature; a thermal cooking thermometer using infrared detects emitted energy at the surface. Only the contact probe answers whether the center of meat has reached its target.

Common questions

Questions before you buy

Can a thermal thermometer measure meat temperature?

An infrared thermal thermometer measures the surface, not the center. Use a penetration probe for internal meat temperature.

What is a thermal food thermometer useful for?

It can screen surface temperatures on cookware, griddles, ovens and food, subject to the device's range and emissivity limitations.

Can infrared see through meat?

No. Consumer infrared thermometers read emitted energy from the visible surface; they do not see into food.

Which thermometer should I use for cooking chicken?

Use a clean food probe in the thickest relevant parts and compare readings with USDA safe-temperature guidance.
