How to Calibrate a Food Thermometer

Use a well-mixed ice slurry for a practical check, keep the sensing area away from the container and follow the model's adjustment instructions. Not every thermometer is user-adjustable.

How to Calibrate a Food Thermometer
01

Check whether calibration is permitted

Read the manual before turning a nut or entering a settings menu. Some models allow an offset; others can only be checked and must be serviced or replaced if outside tolerance.

02

Make a proper ice slurry

Fill a clean vessel with crushed ice, add enough clean water to fill the gaps and stir. The goal is a dense mixture of ice and water, not a glass of cold water with a few floating cubes.

03

Place the sensing area correctly

Immerse the full sensing zone without touching the bottom or sides. Stir gently, wait for stability and compare the result with the expected ice point.

04

Adjust only as the manufacturer directs

Use the specified calibration control or offset procedure while the probe remains stable. Record the result if the thermometer is used in a food business.

05

How to calibrate a meat thermometer that starts at 120

A dial that begins near 120°F may not include the ice point, so an ice-slurry method cannot verify its displayed range. Use the manufacturer-approved high-point procedure or replace or service it; a boiling-water check must account for altitude and air pressure.

06

Recheck after adjustment

Repeat the measurement with a fresh, well-stirred slurry. If the reading drifts, will not stabilise or remains outside the stated tolerance, stop relying on it for food-safety decisions.

Common questions

Questions before you buy

How to calibrate a meat thermometer that starts at 120?

Its scale may exclude the ice point. Follow the maker's approved high-temperature method, applying local boiling-point correction where relevant, or have the instrument serviced.

Can every digital food thermometer be calibrated?

No. Many allow only a verification check, not user adjustment. Consult the exact model manual.

Why is my ice-water reading unstable?

The sensing zone may be touching the vessel, the mixture may contain too much water, or the ice may be melting rapidly. Rebuild and stir the slurry.

How often should a food thermometer be checked?

Check according to the manufacturer's and workplace procedure, and after a drop, temperature shock or any suspicious reading.
