Internal Food Thermometers for Core Temperature Checks

For quick checks, prioritise a narrow sensing tip and clear response specification; for long cooks, use a properly rated leave-in probe.

An internal food thermometer measures temperature inside food rather than the surrounding oven or pan. For a meaningful result, its sensing area needs to sit in the coolest part of the centre, away from bone and the cooking vessel.

Common questions

Questions before you buy

What does an internal food thermometer measure?

It measures temperature at the probe's sensing point inside the food. It does not automatically represent the whole item, so check more than one place when thickness varies.

Where is the coolest part of cooked meat?

It is usually near the centre of the thickest section, but shape, bone and heat direction can shift it. Probe several nearby points and use the lowest stable reading.

Can an internal thermometer touch bone?

Avoid bone because it can conduct heat differently and distort the reading. Reposition the sensing tip into the surrounding meat.

How can you check whether a food thermometer is accurate?

Follow the manufacturer's calibration-check procedure and compare within the model's stated range and tolerance. Replace or professionally recalibrate it if it falls outside the allowed result.
